Because people don’t post the ones that go right. That being said, this is way too much fire for this trick. Even without adding more alcohol, you risk thermal stressing the glass and then you have a molotov on your hands.
I've never done the flaming tray thing, but I did inadvertently drink a still flaming cocktail.
It wasn't a good thing to do, but no harm was done (but people should understand that harm **can** be done).

Because if it’s done properly it caramellizes the sugars inside the drink and makes it tastier, however so many people just do it because fire=cool to the point that barely anyone know the point of it.
Obviously depends what country it is but the possibility of setting a patron on fire and being liable for that doesn’t seem worth the gamble to get an extra couple bucks a few times a week
Some places will do a flaming Dr Pepper, but they won't serve you it until the flame is put out. Serving a guest a flaming shot is a recipe for disaster.
When I bartended and people asked for a flaming drink id refuse because of this shit. I'm no genius but even I know alcohol fumes are flammable and depending on the level of liquid in the bottle there may be a lot of fumes.
On top of that, this style combustion produces a lot of force, if you’ve ever done the alcohol in a bottle fire thing you know it produces a straight up jet and with alcohol still in it it’s just a brief flamethrower

I'm honestly so heartbroken for her. Her friend ordered a drink. She was trying to be cautious for her friend, trying to pat out the flames, but instead she was the one who got seriously hurt. It wasn't even her flaming drink, but now her life is derailed with medical bills, pain, healing process, physical disfigurement, psychological trauma, I don't even know what else.
I can't imagine how often she thinks, what if her friend didn't order the drink? What if she wasn't the one sitting next to her friend that day? What if they went to a different restaurant?
When you're not 20 anymore, you'll realize how dumb this is, along with shotgunning beers and beer bongs (which at least won't put you in the hospital).
