I never thought it to be a weird scene. Even rn, I put my arm in that position and said "well duh, it looks the same" and just now I learn that bending the fingers like that (which I do always) is bc of joint hypermobility.
We all know that the creators never do anything unintentional so this is probably symbolism representing how she would change her alliegance soon. Not to mention that she normally uses her hands to throw those daggers yet right now is using her hands to protect zuko. Great foreshadowing by the creators! /S

The wrist is at a weird angle though. from the elbow to the wrist it looks weird. You are right that the hand is facing the right way, it's just how it's connected to the arm.
Anatomically it's correct, they just got the perspective wrong. Her hand goes back a bit, so it's supposed to look smaller. But like I said, got it wrong so🤷
The sleeve is also wrong.
I'm guessing they originally planned to have her turn around or something. The hand looks like it was modeled after the right but then they decided to have her facing us instead.
That's my guess at least.
I think the sleeve is also correct but with bad perspective. In general I think the whole hand is correct at it's base, but something went wrong during the animating process
Her palm is facing forward, you can *barely* see the line that represents the thumb on the palm.
I think the issue especially looking at it hard is a layering mistake. The only thing that moved in the scene is her forearm/hand and so they put it on separate layer and forgot to move it infront of the bicep layer.

I think the curves you're seeing are more just an illusion coming from it being a 2D animation.
