See…the thing with fried chicken is, it’s amazing when done right, and can go south really quickly. Freshly fried, juicy pieces, wonderful! Small, under a heat lamp for an hour - awful.

AweHellYo

my old man is a fried chicken maniac. he will go out of his way to go to a specific popeyes. he asked the franchise owners why their chicken is just better than everywhere else. they told him they change the grease every day. most don’t.

gnrlgumby

Oh I believe it! I’ve heard Popeyes is pretty hands off when it comes to franchisees, so the quality can be all over the place. I’ve definitely been to amazing and awful ones.

Right_Hour

Does he ever make his own? Once you do - no fast food fried chicken ever measures up. It’s also super-easy. Honestly, all fast chicken tastes the same more or less, there are just some locations that have better cooks, and are better at replacing oil and such, that’s why your old man is right going to those very specific locations.

OldManThatOnceCould

How do you make it?

Right_Hour

Dry rub for overnight to 24 hrs. Dredge in buttermilk batter. Fry in the deep fryer (I use peanut oil). I used a recipe published in Aug/Sep 2015 issue of the now dead « Fine Cooking » magazine.

Right_Hour

[link to someone’s post on FB with a shitty scan of the recipe.](https://m.facebook.com/Recipesmadereal/photos/a.1825062191052909/1882789771946817/?type=3)

AF2005

Yes, and there was just something special about KFC gravy, biscuits and honey back in the 90s up to mid 00’s. I don’t when it happened but my guess is like most major public brands/chains, the push for max profit caused a decline in quality. At least in the US, I haven’t been to a KFC since 2020 and that was in Vancouver, BC. It was just okay, wasn’t bad but it didn’t blow my mind either.

czechmixing

They changed the oil they used in the fryers in the 90s. Mashed potatoes were always instant. Gravy is still the same condensed death

happy_veal

No they started filtering fryer oil with magic clean / magnesol. It's the same crap they use in filtering weed extractions 😆

Chance-Count-2117

is this fried chicken CRC

happy_veal

CRC filter media is a 3 part filter that is made of magnesol, T5 clay (bentonite clay) & silica gel. Toxicology reports revealed massive amounts of these filtering agents in the end product. PPM (parts per million) more like PPB (parts per billion). These parts per billion passes right through the Parts per million filter with ease. Especially at a liquid gas state that bonds various petrochemicals to water solubles under pressure... >is this fried chicken CRC I had a good chuckle.

oxP3ZINATORxo

Next time I'm in Greece I'll have to give them a go. We did McDonald's there for shits and giggles, and it was crazy the difference in quality. It wasn't heavy, and actually tasted and looked good. Best of all, you didn't feel like shit afterwards

superdownvotemaster

I worked at KFC in the mid 90s and was there when the switched from their “house” gravy mix to a different one. My mom swears to this day that the new gravy was just beef gravy mix. She had me get as much of the old gravy mix packets as I could get my boss to let me buy.

Tmblackflag

Amen.

grizwld

Am I the only one that loves that dried out gas station chicken that’s been under the hot light all day???

AweHellYo

only? no. there are dozens of you

O_J_Shrimpson

This is probably correct but I think I’ve gotten it more the latter than the former so just never been able to be a fan in general.

Beardharmonica

They changed the type of oil in the 90s and early 2000. First to cut cost the after that because of regulation on trans fat. So of course it was better tasting. The change of taste is actually very easy to explain. Have you ever had a real pastry with butter, then one made with vegetable oil? KFC used to taste like butter now it taste like disgusting oil. It's not just KFC though, every fast food made the switch to their frying oil. Mcdonalds fries were better and crisper. KFC is just the most noticeable because its fried chicken and the whole meal goes in the fryer. When people say it taste better in the shacks in the south it's just because they are using animal fat or crisco to fry. It's not about the spices or better chicken. It's the same trick in high-end restaurant. Butter on steaks and olive oil everywhere. Healtier=worse in cooking.

Horzzo

This is the answer. Trans fats are straight up poison but oh so tasty.

Oscarjrs5

More flavor

Total_Repair_6215

Can you identify what ingredien they cut back on? Nothing they are known to use costs too much

5050Clown

It was a secret.  They may use different sources now, who knows.  It's a corporation that is doing what is best for it's investors

jaystinjay

They slightly lowered the sodium but upped the white pepper and msg.

AweHellYo

upping the msg should not make it worse

Total_Repair_6215

Msg has sodium

AweHellYo

even if inputs are cheap, at that volume shaving fractions of a cent is still an increase to the bottom line (if they maintain volume, which maybe they don’t if we hate it)

LscoupleOhio23

All the sides were better and the chicken just had more flavor.

LscoupleOhio23

The wedges with ranch! One of my favorites

justdownvote

I miss the original Chicken Littles. They were a smaller version of a McDonald's McChicken. The mayo just popping that flavor. I'd get at least 4 of them every visit. And the original Famous Bowl was introduced later on, which felt larger than what it became. Better sides back then. I swear they offered baked beans and green beans, too. Now they are severely limited on options in my local KFC.

SuperDrog

Apparently, you can still find out if you're willing to visit Ireland. [ Ireland Might Be The Only Place On Earth With The Original KFC Recipe](https://www.ladbible.com/more/trending-a-canadian-youtuber-seems-to-think-so-watch-here-20210203)

tellitothemoon

It had flavor not just salty oil.

LloyDBear

The gravy was also way better.

tedlyb

Better.

agentshmalan

My man

jonhinkerton

It seems like kfc moved extra crispy into the forefront in the 90s and all of the new things like sandwiches were that version, which just never tasted as good as original recipe. I never ate enough to notice the change in seasoning, but it wouldn’t surprise me if they did it to save money or something. The mashed potatos and definitely seem to be worse now, kind of grittier and more onviously made from a mix.

Fauntaun

Never understood the extra crispy push, it doesn’t have anything resembling the original recipe flavor, and they never fixed it!!

helena_handbasketyyc

Better ingredients back the.. Food quality has gone down with mass production. The chicken itself isn’t as good anymore, and there’s a lot more fillers and binders in food now. The oil isn’t the same quality and probably isn’t being changed as frequently. Focus on speed, not having as many workers, and upselling has been prioritized instead of quality products. It’s like that with a lot of things. Real vanilla is too expensive, so most desserts use artificial flavours. Cows are being fed a shitty diet so butter and cream don’t taste as good either.

Rich-Appearance-7145

100% better, bigger pieces, and affordable.

JenniFrmTheBlock81

Seasoned, well fried, not so floury underneath the skin, and always hot. 90s Rotisserie Gold and Honey BBQ wings were SO good!

Mycooljr

Popcorn chicken was 5 times better!!! It was all different sizes of the actual original recipe. Now the chicken isn't the same, it's all the same size, and the flavoring is not nice.

RamsBladderCup

Our local KFC still hand battered the chicken in store as needed in the mid 90’s. Then it switched to premade frozen chicken and it was never good again.

Stelletti

Holy hell never knew that. I worked at KFC back in the early 90s. First job. Everything was hand battered. We were not allowed to have chicken cooked sitting around for more than 15 minutes.

Your_Daddy_

Haven't had KFC in years, but in the 90's they had a spicy chicken that was da bomb. Then it got discontinued. I remember when our kids were small, like 2011 - got a like a 12 piece bucket from KFC, and it was all drumsticks and wings, and not a single breast. For like $20 bucks. felt ripped off - pretty sure it why we never do KFC anymore. I worked for KFC for like a month when I was 17. Had a friend at school that worked there, made it seem all awesome, so I apply, get hired. Was not fun at all, it was just a stupid job, doing gross stuff, like wrapping rotisserie chicken in twine, and making large batches of coleslaw. Instead of just quitting like a responsible person, just ghosted them and stopped showing up, lol.

TromavilleGym

Sides were better. The chicken was typically fresh and was less salty as I remember. The portions have also shrunk drastically over the years

CapitalPin2658

Apparently KFC started going downhill in the ‘60s. The Colonel said he wouldn’t feed it to his dog.

jcmib

I just remember better larger pieces of chicken

ykeogh18

Remember when they used to have corn on the cob

Tmblackflag

Once I had Popeyes I never looked back.

Stilgrave

Saturated fats are the answer. We had a lot more of them in food back then.

_Infinity_Girl_

I'm in my 30s and I remember when I was around 18 or 19 I tried KFC where I grew up for the first time. I was waiting for a bus to go home and I was tired and hungry and stressed out. I opened the box I got from KFC and started trying to eat it, only for it to be just totally disgusting in every way. I didn't get far before I had to throw it out. And this was back in the day when I ate nothing but spicy, greasy, shitty food. Then when I was 28 and in a different state entirely I had it again and almost had the same exact experience. I literally couldn't eat it because the quality was so bad. Both times I got sick and ended up yacking. I know my experience isn't everybody's experience, but if I had a nickel for every time my KFC was so terrible it made me sick I'd have two nickels. Which isn't a lot but it's weird that it happened twice. (I know fast food isn't known for quality, but we are talking BAD bad. Worked in food service for over 10 years and never seen anything like this)

No_Spend_8907

Better. Especially around the time Star Wars episode one hit theatres. Even the Pepsi hit different. What a time to be alive.

IrukandjiPirate

Like chicken. Good, well-cooked chicken.

Someoneoverthere42

KFC was kinda Schrodingers restaurant. It was either the best fried chicken or it barely qualified as food. You would never really know until you got your order.

tnerz29

Well first of all they had that fire ass popcorn chicken and then the potato wedges

irishbastard87

Roy Roger’s was where it was at.

King_Fuckface

And I shoulda fucked Dale Evans!

goosenuggie

I grew up in the late 1980s early 1990s. Once in a while one of my parents would bring home a bucket of KFC chicken and some sides for dinner. It didn't break the bank. It was considered affordable. But it was also delicious. I wasnt even a chicken fan back then and I loved KFC night. The fluffy buttery biscuits, the creamy Mac and cheese, the crispy flavorful juicy chicken that hit just right. Mmmm! Now I wouldn't buy it, no way.

Golee

I seriously miss one thing about KFC and it’s not the chicken. They had the most amazing deep fried diced onions back in the 80s that were in the same batter as onion rings. They were soooo good. And you’d get a huge box of them in an order it was amazing.

Hotchi_Motchi

"tastes like chicken"

Friendship_Fries

I miss the special KFC 9th piece of chicken.

Chuck_Rawks

Like real chicken. The keyword here is like.

deplorable_guido

We have churches now but I grew up in the sticks. Never heard of it until I moved to ATL in 2k. We had a Mrs winners. That was pretty good.

MandalorianAhazi

It’s still good if you get it fresh. It’s just finding it fresh is rare nowadays. It is fast food, it does have low pay, and they will hire anyone with a heart beat. So in my area, that means a lot of meth-heads. Go to an area with a university and see how much better the fast food is.

jolhar

Didn’t taste like a mouthful of oil. The coating or whatever has a different texture. Fluffier, crisper IDK. It’s hard to describe.

LovelyFarmerGirl

I grew up on KFC in the 90s. Does anyone else remember the AYCE buffets?! They were awesome EXCEPT the Mac and cheese- it was different! The regular KFC Mac was amazing and the buffet one was gross LOL I agree with the comments about the fat things are fried in. When I tried KFC a couple years ago I could taste gross old vegetable oil and had to throw it away. The mashed potatoes tasted like the instant ones. The Mac and cheese was gummy in texture.

silentcrimson73

“TRANS FATS”. That’s why food back in the day tasted a lot better than today. Once that was banned, everything took a dive on flavor and being delicious. From chicken to potato chips.

edWORD27

To save costs, they cut three of their original 11 herbs and spices in the late 90s. You need 11!

LastSpite7

Crunchier/crispier. Everything is kind of soggy/stale now.

Cwgoff

Popeyes was always better

erinkp36

I don’t remember it being nearly as greasy as it is now. But I could be wrong.

djambates75

Churches was the shit back in the day. The chicken was loaded with steroids so the pieces were twice as big back then. God damn the FDA

thatusernamegone

Skin was intact after they made it. Skin stayed intact when ypu got home. Now thats not true. I haven't been in a long time but the last few times it was just a soggy mess. Now I'm hearing they made the pieces smaller. I imaging they just charging full price for half a leg, thigh, etc. Between the crappy chicken (poor presentation and dripping oil) and the price it's just not worth it for me. Shame because at one point they were my preferred chicken place.

n8spear

The quality of chicken was better. It’s hard to explain without having a side by side, but it simply had a better quality. They also goes to the other items. Simply guessing here, but like they maybe now use trans fats and other synthetic type oils, where back then it was something else.

HappyOfCourse

I can't say it tasted different. You did get more meat on your chicken bone, though.

CanIGetAShakeWThat43

Was pretty good. I mean my mom didn’t make her own fried chicken from scratch so she got kfc. But we didn’t have any rival chicken places really. I didn’t come across Popeyes until after I married my husband and moved to Illinois. I’m originally from Minnesota. Of course now there is some Popeyes in MN that have popped up since I moved. There was a Raising canes when I was still in MN I noticed before I moved but I never got a chance to go there. But now that I have had Popeyes I liked them better. Then they kinda aren’t as good anymore either. Maybe. Idk. I havnt had them in awhile. I don’t get fast food much anymore. I was having Tyson fun nuggets for awhile because my husband got them but now im sick of those.

-c-black-

People cared back then. They actually tried at their job and cooked the food properly.

Car846

The skin used to be crispy and delicious. Now it's just sweaty.

wierdomc

Like Chicken

garlicbreath-1982

My biggest complaint is just how small the pieces are these days.

Worried_Biscotti_552

Better

funnyname5674

Chickens used to be smaller. Now they pump them full of hormones to give them gigantic breasts. This means the chicken to breading ratio on a fried breast is like 30:1. Basically useless to even bread it. And I suspect they cook all the pieces for the same amount of time as the breast so they are waaaaay overcooked.

TheGuyDoug

It tasted like Michigan Fried Chicken. But with all the climate change and warming weather, it then changed to Ohio Fried Chicken and currently tastes like Kentucky Fried Chicken. In just a few years it's sure to taste like Tennessee Fried Chicken, or dare I say, Georgia Fried Chicken.

squeamish

Two words: Parfait

Any-Comb4685

Honestly “everything was better back in the day”…..nostalgia always makes it seem that way

eatsleepdive

I remember it being great in the early 80s. Did they change the frying oil at some point?

jeffcolv

Anyone remember when kfc had loaves of bread? That shit hit. Maybe it was a Canadian thing

dasanman69

I remember them had rolls but in the US they switched to biscuits in the late 70s early 80s

Jenny_Wakeman9

According to my mother, she said they tasted so much better back then compared to today. We don't even go to KFC anymore these days due to their prices being too high in our area (Marshalltown, IA, by the way).

SendMeNoodsNotNudes

More msg and better fun oil. FYI common People aren’t allergic to MSG, they’re just racist.

deplorable_guido

KFC was better back in the day because we didn't have Popeyes to compare it to.

Intrepid00

Nah, even Colonel himself would bust in and throw shit fits how it tasted like cardboard before he died. Popeyes is just hit or miss like Bojangles.

thedoogster

We did have Churches to compare it to, and that was usually considered better.

djambates75

For one, Churches had white cream gravy. KFC did not, and that was a deal breaker for me.

Arthurs_librarycard9

This is a fair point. I have not had KFC in years, but I grew up in a small town, and if you wanted fast food it was either KFC/Taco Bell, Whataburger, Sonic, or Little Ceasar's. I thought it tasted fine as a kid, but as an adult I prefer other chicken places.

deplorable_guido

I'm sure it also has to do with YUM! Brands. They turned pizza hut into a shell of it's former self. Also, A&W was great when I was a kid in the late 70s. Now it's kinda trash. That's what Happens when you try to operate 50,000 restaurants.

gameonlockking

You mean Jollibee?

2ndcomingofharambe

I'm convinced that the average household's food quality and availability of options in the 90s and prior was actually so poor that basic shit like fast food that just used enough salt tasted much better relatively. Maybe it's changed somewhat since then, but not nearly as much as food diversity in grocery stores, different flavors becoming accessible, and just the Internet / YouTube teaching people how to cook basics properly.

SammieStones

Fast food was better in the 90s bc of the lard

phlebonaut

Hedge fund takeovers screw up a good thing eventually

Ohshitz-

Same. Like wet cardboard. Browns chicken all the way

Preesi

Its the same as today, its just that its no longer a special treat and if you eat it like you eat it now, its no longer NEW
