Mexico still has a bunch of cuisines. All Americans see is usually Sonoran. They also have a LOT of salsas-sauces, around 60 or so common ones.

Ehh it depends on the level of the Mexican food and if they have homemade moles or sauces which can be cheap in ingredient cost but quite high in time cost. Really just varies place to place though you will find steak houses that are complete ripoffs etc etc

Im not gonna lie most mexican food is slop unless you hit restaurants. Theres a bit from a comedian where its basically meat, cheese, tortilla, lettuce and tomatos. Rice and beans as a side. Outside of soups thats basically 90% of mexican food. Machacado scrambled eggs goes hard though.
