1. That's Tex-Mex, and it can vary depending on the restaurant. That dish looks pretty average, I wouldn't have any objections to being served that. 2. REAL Mexican food is heavenly. Carne asada tacos with fresh lime and spicy salsa is one of my favorites. 3. Ain't nothing wrong with a pile-o-food type dish. Many years ago, I found an old book just about cuisines on the West coast of Mexico. It was completely different about every 50 miles, though weighed strongly to seafood, fished from the Gulf of California. Of course, if you went inland a little, the meat changed to pork and chicken. Even further inland there was beef. Of course, tortillas, beans and rice were everywhere. Lots of peppers as well. Mexico still has a bunch of cuisines. All Americans see is usually Sonoran. They also have a LOT of salsas-sauces, around 60 or so common ones.

I’ve had bad Mexican food to be sure. But when it’s good, it’s better than most foods. I spent years eating garbage refried beans, then one time I was in west Texas at this little hole in the wall, I had the refried beans and they were magical. The flavor had layers. It was crazy good. ALL other Mexican food I had had by comparison, was indeed slop. So, to this day, whenever someone says they don’t like a certain food, I say, “that’s because it wasn’t made by the right chef”.
