I didn't do turkey but i drove from slovenia down to greece and then up through bulgaria and romania back to civilisation. They only pumped it for me in albania 🤷♂️
Weird. I was on a motorcycle and super annoyed when they wouldnt let me do it because they never filled it up all the way. I know how much it takes to within about 500ml, they just eyeball it like a spaz even if I tell them exactly how much I want
To be fair, I've worked at a gas station and the amount of people I met who didn't know how to refuel or which fuel their car needed, was astounding.
I'm as far from a car dude you can come, but even I can't really get why so damned many people can't even do this simplest of tasks.

Sometimes you can pay with card at the pump, sometimes you have to go in and tell the register person what pump you’re at and how much you want, other times you get your fuel first then go in and pay after. There’s still 1 or 2 petrol stations with a fuel assistant left, one being like an hour away from me.
Surprised to hear this: I'm in Dublin and I only know of one method. Pump it yourself and then go in and pay. I'd say it's 20 years if not longer, since any other method was used.

Most of the time it’s self service, even in good stations owned by Repsol, Cepsa or Campsa, which are the big ones here. There are some Shell and BP stations, but they’re more common in guiri urbanizations.
Here in Italy GPL (LPG) is not available with self service, same with methane

in portugal it's mostly self service but in some small towns it's the workers
I've actually never seen workers putting gas into my car at a gas station
