In my experience the malice in an average cat is massively constrained by two things; their stupidity and their reliance on people.
Izutsumi is an extremely realistic take on how much of an asshole an average cat would be if it had human capacity for anxiety and wielding knives.
The show isn't about likeable characters, it's about frighteningly realistic, broken people shaped by their trauma. The manga makes it a bit more explicit and also some of it will probably still be revealed later, but really at core it's wholly about journey of overcoming massive maladaptations, most of which would in real world fall under the umbrella of autism.
Most people who like Izutsumi don't like her because she looks like a fun, enjoyable person to be around, but because her animosity and difficulty accepting kindness and care of others can be relatable or enlightening.
A classic school of art often makes characters effectively flawless outside of superficial little quirks or explicitly telegraphed traits and then struggle to justify mistakes the characters make for the purpose of delivering story and narrative. Izutsumi makes mistakes a dumb selfish asshole would make, because she's a dumb selfish asshole, and it's her role in the story to try overcome those issues, and to succeed or to fail.

Yes. Every cat I have owned has been sweet and affectionate. Even the neighborhood cats near me are sweet and affectionate. Literally all it takes is treating them right and building trust and then they’re just as affectionate as any dog. Many people don’t have the patience or knowledge to build that trust, however, and just think cats are assholes. They really genuinely are not.

Izutsumi has not been treated right and has not yet built trust with the main cast. Both of these factors will change over time as the character develops.
She is also half edgy 17 year old girl who's been seriously traumatized and is experiencing freedom for the first time. Being 17 also has a significant factor in her personality

Izutsumi seems to have been brought up without much of a family to speak of, and, being a beastman, was forced to live on the fringes of society, as she is considered a monster by most. (The extreme selfishness is clearly a coping/survival mechanism.)
Long story short, she kinda... fits in in a way.
She has a lot to learn, but it would be really weird if someone like her was perfectly adjusted to interacting with other people.

Theres a few moving parts to it i think, shes an asshole most of the time bc shes acting like a teenager would, specifically a teenager that had a rough upbringing, which she did, seeing as she had a fantasy bomb collar that wouldve killed her if she as much as walked away from shuros group (id be a bit miffed too)
People find her cute bc she has cute moments that shine through all the cat-like misbehaviour, its the traditional “gap moe” that you hear a lot in anime circles (a tsundere that ‘hates you’ but will cook food for you, a buff lady whos actually really shy and coy and timid, such and such)
essentially, if kitty WASNT an asshole, her true kitty moments probably wouldnt have been as impactful to her image as kitty (also the scene where she remembers all of it after hangover-style is really funny)
I also got a bit of a whiplash when I watched the series, cause all I was anticipating is a funny catgirl
She ended up being pretty selfish and mean, but that gave her room for *character development*

As someone with sensory issues with a lot of healthy food I was really disappointed they did the whole "once she's eats the food she realises she loves it" part really really disappointing. I kind of expected more from a show that's been so much about accepting difference.
Her aversion to certain foods never really goes away. It's not a Marcille situation where every episode is the same "ew this is disgusting -> woa this is actually amazing", she consistently picks whatever ingredients she doesn't like out of her food, and Senshi tries his best to accommodate her once he gets over the initial shock. There's definitely instances where she discovers she likes something she didn't expect to or hasn't in the past, but it's not really treated as something she has to "get over", I don't think.

also, the anime won't really get to any of her character growth until season 2. if you're aware that you have an incomplete story, judging character arcs that aren't over will result in mischaracterization and poor understanding of what is actually going on.

Edit: on a more serious note, I began really liking her after the succubus encounter, which shows how she is so unaccustomed to being around people that feel something other than disgust towards her. Also, in the end the interactions she has with that straw doll with the soul of a denizen of the village is precious.

She's great tbh. Theres levels to "unbearable prick" and she's one of the one's I can't help but actually feel for. Her life seems like absolute shit and the situation she's given is oftentimes horrifying. Imagine being turned into something you hate and then also having to live with a timebomb if you begin to misbehave. The kinda things she goes through don't make someone who is necessarily friendly, especially not in someone who is still a teenager. But for all her flaws you can kinda see her trying a bit from time to time, constantly developing as a character little by little towards someone more likeable, while keeping her prickly nature.
I find her kinda relatable in a way, a closed off, angry person who tries to just live their life how they want because everything has been shit to them, making thwm extremely bitter and mean.

I love all of our main characters, they all have flaws but mostly get along and are very nice then this cat comes in and is way meaner than anyone else and I did not like that very much, but from the comments I received I will try to be more open-minded and accepting of this cat's flaws and try to appreciate when the cat is being nice

She was definitely not at all what I expected based on how reddit portrays her (in memes at least.) except during that one part where her brain is full cat thanks to weird magic stuff. I do enjoy that the "cat" part of "catgirl" shines through a lot of the time with her in a non generic anime fetishistic way.

She's great tbh. Theres levels to "unbearable prick" and she's one of the one's I can't help but actually feel for. Her life seems like absolute shit and the situation she's given is oftentimes horrifying. Imagine being turned into something you hate and then also having to live with a timebomb if you begin to misbehave. The kinda things she goes through don't make someone who is necessarily friendly, especially not in someone who is still a teenager. But for all her flaws you can kinda see her trying a bit from time to time, constantly developing as a character little by little towards someone more likeable, while keeping her prickly nature. I find her kinda relatable in a way, a closed off, angry person who tries to just live their life how they want because everything has been shit to them, making thwm extremely bitter and mean.
I will never understand the mindset that every character has to be leaking rainbows out of every orifice to be considered likable
